CELERY PURE SOUP






• Onion slice or chop
• Celery root
• Whipping cream ( 1 ltr )
• Fresh milk ( 1 ltr)
• Seasoning
• Polenta
• Corn flour

Methods :
Sautee onion until soft, put celery root and wait until soft. put cream and fresh milk and chicken stock.seasonig wit salt pepper and chicken powder .add with polenta and corn flour.

Fish stock
Fennel
Carrot
Zucchini
White wine
Seafood: shrimp
Scallop
Squid
Salmon
Snapper
Saffron

Methode: all vegetable brunoase cut.and seafood cube cut. And combin together.and put salt and pepper.

Fish stock:
Tomato + spring onion + onion + snapper fish + white wine.+ ice cube and cold
Water +salt and pepper.combine together .all ingredient big cut ( cube)

  • Caramel Deco
  • Cut Strawberry, put on glass and stick
the Tuille into the Berry

TIRAMISU

  • Melted Chocolate Line over the plate
  • Place Tiramisu
  • Sprinkle with Grated Chocolate white & dark
  • Chocolate Spiral & Caramel Deco
  • 1/8 Strawberry
  • Chocolate Sauce in Line and grated Pistaccio


LINGUINI AL VONGOLE

  • Saute garlic & onion chopped in olive oil
  • Add tomato concasse & vongole ragout
  • Add hot pasta chop parsley and basil leaf
  • Sprinkle with parmesan,pesto and garnish with rocket leaf
